Spicy Thai-Style Salmon Salad with Coriander Lime Vinaigrette

INGREDIENTS

For the Salmon

  • 200g skinless salmon fillet @primecuts_kenya
  • 1 tbsp vegetable oil
  • 1⁄2 white onion, sliced
  • 1 cucumber, sliced
  • 1⁄4 cup finely chopped coriander
  • 1⁄4 cup finely sliced spring onion
  • 1⁄2 cup mint leaves
  • chilli flakes to taste
  • Salt

For the Sauteed Mushrooms

  • 2 tbsp Jars of Goodness Coriander & Lime
  • 3 tbsp lime juice
  • Vinaigrette
  • 2 tbsp jaggery
  • 1 long red chilli, sliced
  • 1 tsp coriander
  • 1 small garlic clove
  • 1 tsp spring onions
  • 3 tbsp fish sauce
  • 1 tsp mint leaves

METHOD

  • Place all the ingredients for the dressing in a mortar and pestle and mix well to combine.
  • Heat a frying pan over high heat.
  • Season the salmon with salt and pepper. When the pan is hot, add the oil to the
    pan. Then add the salmon fillet and place a saucepan lid on top of the salmon so
    that the fillet is gently pressed to the bottom of the pan
  • Place the onion and cucumber in a large bowl.
  • Flake the salmon into large chunks and add to the bowl. Add the coriander, spring onion, and mint. Add the dressing. Toss gently to combine. Add chilli flakes to taste.
